Look at asop, which for example, doesn't come with play store, maps, gmail, and so on. Which begins to limit their spying capabilities. This is why rooting is hated.
There are efforts to degoogle android. Which basically means an android device without all the Google spying.
That said, the hardware can still spy as the primary processor has this built in with its firmware.

Android is essentially a linux os modified for the phone.
I don't see why Gab couldn't do something similar but keep it independent.
