My brother-in-law RIP was taught by a Cajun friend how to cook these. They dig a pit and fill it up with smoked wood and fire it up. Then when it's down to coals, they suspend a pole or log with the hog tied to it across the pit. Not touching the coals. Then cover it up with pine boughs, etc. They let it smoke all night and into the next day until it's ready.
