My take is that jews do it because it's "disrespectful" to refer to their false god as the real, big-G God. Devil worshippers typically believe that "God" (big G) is the god of false light and that those who refer to Him (eg. Christians) are deceived. So, the devil worshippers censor God as G-d in order to distinguish between their demon lord and the true God.
