How did we go from "The Congress shall have Power ... to regulate Commerce ... among the several States" to "if a company sells something in more than one state the Congress has the power to regulate any and everything that business does"? The Constitution says Congress can regulate the commerce between states, not the people or businesses engaged in that commerce. That means they can regulate the conditions under which that commerce takes place. That is all.
