How did we go from "The Congress shall have Power ... to regulate Commerce ... among the several States" to "if a company sells something in more than one state the Congress has the power to regulate any and everything that business does"?

The Constitution says Congress can regulate the commerce between states, not the people or businesses engaged in that commerce. That means they can regulate the conditions under which that commerce takes place. That is all.

That quote is a little cherry-picked. The full passage was "So, if it's within the police power to protect the health and welfare of workers, you seem to be saying the states can do it, but you're saying the federal government can't even though it's facing the same crisis in interstate commerce that states are facing within their own borders. I -- I'm not sure I understand the distinction why the states would have the power but the federal government wouldn't."
