I bought a 40 dollar android phone, and did something similar. I know I can't get rid of everything, but mostly everything yes. First, I refused to put in a google acct on startup. Before activating the phone for calls, I went through the starting wizard refusing everything. Then I got Fennec(web browser) off of chrome. Then I got F-Droid(google play alternative) off of fennec. I went in the options and excluded searching for anything with ads or that were non-free. I went into the system settings and disabled everything Google I can. Even with things disabled, I still had to disable notifications. I also had to turn off 'Mobile data and Wi-Fi' for every disabled app separately. I replaced Google's 'phone' with the open source 'dialer,' 'messages' with 'QKSMS', 'Gboard' with 'Unexpected Keyboard', 'Google Maps' with 'Organic Maps', I got Newpipe (ad-free youtube frontend). I got rid of biometric crap, gesture crap, voice activated crap, to make sure it isn't turning on the mic and other sensors when not needed. I changed the clock, file browser, camera, gallery, I got Tux Paint, I got rid of TikTok and every ansillary bloated piece of crap that wasn't made by google, the works.

This is by far the best phone I've ever had. It doesn't bother me with gay shit multiple times a day, it doesn't show me any ads for any app, it is completely customizable, fast, and with much more space than a normal android phone. My next phone, I will try changing out the OS altogether, but so far I am happy with this one.
