You can store bacon grease in the fridge for 3 months. A year if you filter and container it first. It'll keep in the freezer forever. Always keep your purified bacon grease; it's a great replacement for most high temp cooking oils, and you can make soap and candles from it.
And it doesn't need to be jowl. Best bet is to find a place that sells "bacon ends". When they cut bacon to pretty little, evenly-sized strips, they trim a TON of good meat and fat, and often sell it. I usually pay about $2/lb, and it tends to come in 3 pound containers. Not useful for strips of bacon, but if you have a recipe that calls for chopped bacon, this is the way to go IMO.
