You really nailed it. The problem with Europeans is that they have no comprehension what hate really is, they conflate hate and "not liking something". However there is no question in the negros mind that he hates the european. He feels a resentment for you that you cannot comprehend and he can barely hide.

That nigger hadn't made up his mind on whether to attack this kid until he had ahold of his hand. He felt the weakness in the handshake, he felt him meekly trying to pull away, and his predator instinct kicked in.
The White guy truly acted in an embarrassing manner. He was overpowered and forced to the ground with a clinch, but made no attempt at all to get back to his feet. What should this kid have done, besides not talk to niggers? Well, normally a handshake is meant to show the man you're greeting that you are not carrying a weapon, but the nigger here used this typical sign of peace to launch an ambush. Once you're on the ground like that, GRAB FOR A LEG AND DO NOT STOP MOVING YOUR HEAD!! Can't stomp on your head if you have your arms wrapped tightly around their knee/knees. You can use their body for leverage to help get yourself to your feet, or even trip them and then stand up- literally almost any action other than "lay flat on your back with your hands outstretched" would've saved this kid some brain damage.

At about 0:55 in the linked video, Nick Diaz eats a hard left hook which stuns him, causing him to fall forward. He hits the ground awake, and watch what he does- he actually avoids being head-kicked (which would have been a foul under the rules) by moving his head from a turtled position. He took the kick on the shoulder- doesn't feel good, but it's not going to knock your teeth out.
