While Spectors WOS was a significant development in recording techniques, it was more effective in certain genre's and songs, and this wasn't one of them. I think your assessment of "over-stuffed" is a good description and the song is more obscured than enhanced in that version. George may have been influenced and accustomed to Sir George Martin's involvement with the Beatles, which was a more refined technique than Spector, and maybe was trying to distance himself from the Beatles by going with Spector on this album. I agree the original version fits the style and content of the song much better.
