I have the pleasure/annoyance of living quite close to a large population of Gooks/Chinks.

While I abhor their street manners, and general unwillingness to integrate into the community, one of the benefits is living close to a large amount of Asian supermarkets.

The Kimchi you get at those markets is sooo much cheaper and better than any of the overpriced shit you can buy at a regular Western grocery story, it has this weird, almost fizzy texture to it, where it kind of bubbles and pops in your mouth, you really know it is still fermenting.

Compare that to the regular Western grocery store brands, which still taste good, but I think they pasteurize it so all the Wuhan-Engineered fermenting bacteria dies, and it just doesn't have the same mouth-feel.

That's how you know it was made right. It also lends itself to the best frying applications. A bit of fried kimchi added to a ramen, or rice, or anything really, is like nectar of the gods.

There is something to be said for fresh stuff though. Fresh just has a very clean and crisp flavor, sweet and seafood ingredient not withstanding
