Buck was from January. Took the piggies last Sunday. 2 females about 6 months old. One was already knocked up. They are a menace. A tasty tasty menace.

How different does a wild pig taste?

It depends on their age and gender. They are faaaar leaner and a whole lot meaner than their domesticated pink skinned cousins. I've found big ol boars are not worth the effort. Too much testosterone and bitter bad attitude. Even large sows can get gamey. These little ladies were perfect: about 6 months and 70-80ish lbs. This late in the year, (there is no specified season in Texas...take em out whenever, wherever, by any means necessary) I just harvested the backstraps, loins and hocks.

The area I'm in is VERY difficult to break into it. The lands around here are all private. It's one of those "Who you know" situations. When I lived in washington, it would have been possible due to all the public land and open logging camps. But for various reasons I couldn't do it then. Now? Not possible on any level here without practically driving to another state entirely.

It's kind of like that in northern Ohio too. While we do have public lands it gets really crowded in season. To the point where people take trips down to Kentucky and West Virginia for hunts.

Yeah, I like post oak, plus it's what I had on hand. Being in S. Texas, you're also surrounded by mesquite.
