I thought it was about overthrowing tyranny, in the spirit of a Revolutionary War tale such as Johnny Tremain. The Rebels didn't go around blowing up crowded cantinas or attacking civilians, they attacked gigantic powerful military targets, most of the time with uniformed personnel. And they had spies like Leia, who recruited Luke and Han and Chewbacca as assets.
