Lobsters crawl on the sea floor, eat the dead fish refuse that they come across. Back then people were more religious and all about eating fish with fins and scales that were considered clean and can be eaten (bible reference), not "dirty" bottom dwelling crustaceans. Canadian Lobster and Maine Lobster are essentially the same. The lobster trapping waters are adjacent. The lobsters from southern and pacific waters don't have claws, usually only the tail is eaten (and does not taste as sweet as their cold water Maine/Canadian cousins).
