MFW i've had linux on a stick since like 2005. We call them usb drives and yes you can add a display to them.

There used to be a company called GumStix that were tiny imbedded Linux systems. Very interesting and I always wanted one to tinker with but they cost far too much for what I could afford as a poor college kid.
