What's the exact issue here? If you tap somewhere else the copy/paste popup will just go away and you can use the markdown. Is that what you want to accomplish?

If I tap somewhere else the word I have highlighted to add a link to will become unhighlighted.

You can also first create the link and then fill it with the keyword/text you want.
