Fresh Horseradish Leaves + Bay Leaves + Whole Cherries = Tannins because there is nothing sadder than a mushy pickle.

Salt brined pickles are the best. They also make a great Eastern European pickle soup (reserve some brine for the broth). Never use vinegar pickles for the soup.
