1 to 2 years or more. I have tomatoes I canned over 2 years ago and they taste just as fresh as the day I canned them.

My dad was into canning. Jars and jars of jalpenos, tomatoes, bell peppers; banana peppers..stuff like that. You are creating great things and warm memories.

It's more than just time. It's all the effort in growing the garden, making the plants happy enough to give you a bounty. Tons of energy devoted to constantly picking the garden once harvest comes in. Skill and knowledge in how to can properly and not have massive siphoning or producing an unsafe product. Saying it just takes time glosses over a set of skills that many lack and a work ethic that many shun. Great job!!

Oh yeah lots of hard work, but I sure did a much better job than homeland security fending off the damaging insect/rodent invaders within the borders of my garden, and still have time to hang around with my goats.
