You know what? At this point I think im just going to start trying to make my own jerky and preserved meats. I mean, I probably can't do worse than what we are getting in the mass market and I am far more particular about temp/humidity/salt/etc than I bet the mass market is. I feel like this recall is worse than what they are saying, it is probably "bad" meat or was produced in a very unsanitary environment they just wont say it -yet- unless someone gets sick so they are trying to get ahead of it.

I also have a good butcher but need to start hunting even though its not been something I've been into before. I even already have all I need to make jerky myself. Guess its what ill be researching and maybe even trying to do over the long weekend.

The "disturbing" reason was that it was not inspected? What a fucking letdown. Everything is click bait these days.

So, anyhow, I do make my own jerky. I buy the meat that is getting close to the sell by date so it's way marked down. I run it through my meat grinder on my kithenaid stand mixer and season it up. Then I pack it into a jerky gun and spooge it out into my dehydrator and cook it for 8 hours or so. Everyone that has tried it just loves it.

And here's my pro tip of the day. Do NOT buy fancy expensive cuts of meat. I have tried it and there is no difference at all. buy the rump roast or the chuck. Just make sure there is very little to no fat on it.

Please do. I would really enjoy trying out a recipe from another poal-er. I have found a few on here that have been great and are now go-to's for what we cook these days. Ill even post my own results and you can roast me if I F it up.
