What if I told you... You can purchase a pork-belly and make your own bacon?
I do it like this...
Buy pork bellies...
Buy 1 gallon ziplock bags, foil, coarse salt, coarse black pepper
Trim pork bellies so they fit into the bag neatly (the trimmings make great pork and beans)
Salt the slab with coarse salt
Stuff it in the bag and refridgerate
Every day after day 5 slice off a small piece and fry. If it tastes like a pork chop it's not ready. If it tastes like bacon it's ready. It's OBVIOUS.
When it tastes like bacon then pull the whole batch. Scrape off all the salt and give it a FAST rise and pat dry then completely cake in coarse black pepper
Wrap in foil and freeze immediately.
When withdrawn from freeze you have about 3 days to slice off the slab and fry before it gets janky.
