Factory farmed swine produce an inferior end product. Cultivate a relationship with your local pig farmer and barter or purchase the fat fresh post slaughter. Learn to render it into lard your owndamnself. Moreover, the Chinks now own Smithfield, the largest producer of pork in the US of A. And they are feeding the hogs on a steady cocktail of poisons and plastics. No shit.

Cholesterol is one of the building blocks for cell repair. Damaged cells demand cholesterol and the body produces it to facilitate cell repair and maintenance. Dietary cholesterol entering the blood is a myth. The cholesterol you eat does NOT go into the blood causing problems. High cholesterol demand is a symptom of other health issues and NOT the primary disease/condition. It's all lies. Your body needs cholesterol and it produces it on its own. It's good not bad.

Beef tallow is your friend. You can find it in some supermarkets in the oils section.

guess I will have to document my typical carnitas cook... de-bone boston butt (shoulder roast) chunk it, then it all goes into a deep pot full of clean lard for 3 hours. fuck all those other oils (except avocado and coconut)

Bought an Instapot a month or so ago; after reading reviews of people complaining about it for all sorts of reasons I've had nothing but good luck and great meals from it.

Instapots are awesome. Never had an issue.. in fact we just had to replace our original purchase after 10 years - goes the distance

But for this particular recipe, I use a stainless steel Dutch oven.

A good knife, meat grinder and an instapot will yield some self rendered 1/2 pints of grass fed leaf tallow and pastured pig lard.

I'll have to drop by the Polish shop and get myself some lard. They have truly made an art of it, all kinds of spreads with different flavors, put it on a piece of bread and you're good to go.
