Is there anything I should know before attempting 48 hours? I am not overweight. I've also never fasted for more than 16 hours, and even that wasn't intentional.
I get hungry around the 18 hour mark. I chase it away with a shot fo Apple Vinegar with Mother. One 48 hour fast you will be fine. My best advice is when you come off the fast, you're going to want to "make up" for those calories. Finish your first few meals with a tall glass of water before you start adding "one more thing" and a liil dessert and... this is the time you're likely to binge.

Does any amount of calories reset the process?
I wouldn't say the process is reset, you don't go back to your normal Insulin Resistance GH/autography/etc. just because you consume a few calories. Many people advocate it even up to 500 cals a day. I wouldn't call that fasting at all though, that's just eating at an extreme caloric deficit. But back to the point, it does bog down the process while you switch back to a carbolic digestive system until that protein/carb/fat is broken down into insulin and used.

Just do what you can, use it as an exercise in self-discipline or whatever you are pursuing. It's your first time, EXPERIMENT, grow, learn.
One more thing I didn't mention is you will be more thirsty.
If you decide to start doing this every week you may want to look into taking more salt, potassium, D3, K2 and Magnesium.
Don't worry about it this time, it's just 48 hours.
