diet rich in fats and veggies and a moderate amount of protein is best. This keeps your insulin from spiking.

You’re picking and choosing what I said to be pedantic. Potatoes are tubers made of almost exclusively carbs, which is long sugar chains…in contradiction of the recommendation not to eat carbs and sugar.
It's a fuking plant.
If it's plant it's sugar. Period.
The only caveat is that some plant is indigestible but big whoop. So is dirt.
Eat meat. Done
