I'm being lazy and I don't turn the compost, I do keep it moist, but you're supposed to turn it to let it aerate, so it will break down quicker, I used to do that but now I just let it sit, just takes a bit longer.
Occasionally I'll open the lid to let the sun hit and kill any nasty creatures (bugs) that might have come in. I'll add various things over the weeks, dirt and scraps, rotten eggs, grass, milk, broth, anything organic.
