The leaves the best. They are so much flavor to the stock. Even better that they're from store-bought cores, basically free food.

Celery is okay but if you really enjoy the flavor, Try this (en.wikipedia.org)

Lovage is a bit more peppery than celery, grows similar to parsley.

I didn't know about that. Now I have to find some. I know someone that would be able to plant one.

If you have Ukrainians in your community there may be some growing around... Also, I read somewhere once that "Celery seed" you buy from the store are actually Lovage seed, but I've never verified it.

Took me years to educate Mrs. Sunshine about using the celery hearts and such for flavor.

I find I can change people's minds rather quickly. As fast as I can boil a pot of water. Celery, peppers and onions (Cajun mirepoix.) Or celery, carrots and onions (mirepoix.) Add salt and they have a taste. The first woman I did that to, made chicken soup out of it. She pulled vegetables first and added them back in at the end. She said it tasted so good she couldn't let it go to waste. Made a good cook out of her.
