"Why does Apple charge a percent fee for apps that want to make use of Apple's payment system, hosting services, front-end ecosystem, and get access to their player base?"

Does that help better understand why gaming platforms like Epic Games, Steam, Apple, and Google Play charge fees to function as the front end for publishers? Unless they publish their own ecosystem, they have to use someone else. In this case, Epic Games wanted to use Apple's and get access to Apple's devices. They didn't want to pay the fees and they signed contracts stating that they WOULD pay the fees and how they would not bypass the agreement with back doors. Everyone has to sign that agreement if you want to publish on their platform. Just like Steam. Just like the Epic Game Store. Just like Google Play. Just like HBO Max, Hulu, etc. etc. etc. All hosting systems have similar systems in place.

30% is too high and Apple are price gouging.

Epic Games is lead by giant scumbags (not a secret in the gaming industry).
