when elden ring was first announced it was reported to be based on Norse mythology, there was much enthusiasm about that, even fans making their own lore of it. but now it seems that from software is no longer claiming this is the case, that its based instead on an entirely made up mythos. any ideas on what happened??

That was based on a 'leak' that turned out to be bullshit.

The first leaks that mentioned the Norse mythology stuff were put on 4chan even before the game was announced I believe, so it's very likely that it was just concepts that got scrapped during game development. There still might be some of it left in there, but we'll only know for sure once it's out.

i have serious doubts about that story, as the game`s working title was 'Great Rune'

Because all runes are derived from vikings, right? No one else used glyphs and pictograms in all of history.

they may have had some glyphs or something similar ya, but none other were called runes.
