Have you noticed that platformers are usually based in one location? Even if they are fun, they still keep your brain limited to one location, like in real life. What makes Super Mario Galaxy better than average platformer, is the fact that Mario can travel between planets. Your mind is no longer limited to one location, but it's free to travel trough an entire galaxy. This experience helps a kids in understanding that their world is not the only one, and that there are many worlds around them, which triggers the ability of analytical and critical thinking.
It's sad that Nintendo is not investing more in Galaxy series.
