I've seen some of this stuff in the shops near here. Big Lots had some cool little handhelds that contained a few arcade games, but the price was near $40 - that's simply not worth it.
The hardware itself is usually driven by what's cheaply available, especially for this type of device. They're not going to make a bespoke LCD panel, they're going to use whatever they can get and hope you don't notice.
