People in the past had a worse understanding of this in general. Today all three versions would compete well, with each type having their own premium and niche. I wouldnt mind paying up to 4x current milk's price if it meant it was taken from a cow in the same day I bought it. Ive heard others want a 10x premium. Its an untapped market.
