In california mexicans run the back of almost all restaurants. It's due to nepotism, anytime there is an open position a mexican will know someone and poof they get the job first.

This is how illegals operate. Cash under the table jobs are tough to find without latino connections. It's almost a miniature mafia. I used to eat from a taco truck full of about 7 or 8 Mexicans. They made good, cheap, food. I hated supporting it, but I realized even cops would be in line some days.
Every couple years when the kids or cousins, nieces, nephews were of age, they were there. Then in 2017 they said they were leaving. I asked why, in very basic English they said "El Presidente". Trump got them out, but damn those were good tacos.
