Crazy people do crazy things.
Testing the weight and length against small movements. It's not about trying to look like Rambo it's about making the knife move to see if it rattles or feels blade heavy or handle heavy, or unwieldy. Most knife use is close in small movements you aren't stabbing from behind you like a Hollywood haymaker.

Plus His grips all wrong and he's holding it wrong and he's moving from the wrist not the body and lots of other things but testing is different than actual fighting.
If I'm testing an expensive knife I'm gonna look like Rambo. Test it against my natural movements to see if it's too long and I'm gonna cut myself like a retard. This guy is a little ridiculous but it isn't from his open hand movements its his slash technique. He should be stabbing more. More stabby ninja less three musketeers. Be a stabby ninja rambo.
