Two things about this from someone that spent a number of years in the foodservice industry:

  1. Black people always ask for hot sauce. I don’t know where you got the idea they don’t like spicy food

  2. While it’s a common misconception, head cheese is not brain, it’s ground-up facial muscles, like from the jaw, cheek, forehead, etc

Commercial hot sauce is not spicy food for the most part. Texas Pete and shit like that isn't actually very spicy at all.

I mean, sure there are spicier things, but they definitely make food spicier and there are definitely people that can’t handle them. And most black people are not those people
