I prefer one meal a day and did so while working a shovel in Florida. As long as you stay hydrated, you never notice hunger because it's so hot. That one meal though, it's a big meal. You either do it or you don't because it's something that takes getting used to.

Right. People get the wrong impression because they think "all I get is supper!?". But the one meal guys the get huge on it are eating like 3500-4000 calories in that meal

Based on your current, modern understanding of diet, perhaps.

How do you define "healthy"? If someone eats this way as a power lifter and grows stronger while not having adverse side effects, is that not healthy?

Do you realize that before modern agriculture, people didn't have enough food to gorge themselves to death at any moment if they wanted to? Hunter/gatherers likely lived for millennia on one or maybe no meal a day but when they ate, they feasted

I got into it because I would be ravenous after workouts which were generally pretty intense. So I'd come home at night and stuff my face, then gradually I just wasn't hungry throughout the day.

It's not a healthy way to eat... all at once like a starving Vietnamese rice farmer.

I do what feels good and I feel better eating that way, everyones mileage may vary.
