I'm a huge fan of quick one and done recipes for weeknights. This one I haven't made in a bit but its good nonetheless. Its the stupid viral tomato, feta pasta recipe - we tried it and its pretty decent.

Have tried this, it's a fairly common recipe that we do when we have excess fresh tomatoes. Typically we do it with smaller ones, various cherry type tomatoes. It's typically really good, some fresh basil from the garden as a garnish works well too. You can also chuck whole cloves of garlic in with the tomatoes to roast with them.

Same here, we have an indoor garden (101 needs to start growing again) and I would often make this dish after we picked a bunch of tomatoes. I have also done this dish with different types of tomatoes, always comes out well.
