This is supposedly the "famous cookie recipe" that "some woman" paid a lot of money for at a snob-nose restaurant and "I'm going to share it with everyone!" That's absolute claptrap, but it does make a decent cookie. This version also incorporates some changes from whispered recipes at underground cookie joints...if you're counting calories, you do not want these because we've incorporated all the calories.

1lb salted butter, softened. (aka 4 sticks, 2 cups, or one normal US box of butter.) 2 cups white or golden-white sugar. 2 cups dark brown sugar, firmly packed. 4 eggs 2 t real vanilla extract 4 cups of all purpose or pastry flour. (Don't use bread.) 3 cups regular oats. 1 t salt. 2 t baking soda. 2 t baking powder. 24 oz. chocolate chips. (2 regular US bags, I use chocolate/white 50/50 mix.) 2 T heaviest cream you can get.

The night before, unwrap your butter and put in your mixing bowl. Cover and store on the counter until tomorrow. When you're ready to mix, soften the butter just a bit in the microwave. You don't want it melted. Add the sugar and brown sugar. Cream together. I use a biscuit dough cutter for this. Mix until you get a brown paste. Add eggs and vanilla. Mix together, until you get a gloppy paste. Add baking soda, baking powder, salt, flour, and oats. Mix together. You may find it easier to wash your grubby mitts and mix with your hands. Add heavy cream. Mix completely, then add chocolate chips. Mix until distributed.

Cover and chill. Overnight is best, a couple of hours will work. Here in Ohio, we don't have electricity so we just put it in the cold garage for a while.

Preheat oven to 375°F. Grease a cookie sheet with butter. Drop golf ball size portions on to sheet about 2" apart. You should be able to get 12 on a half-sheet (13x18.)

Bake for ~14 minutes or until the cookies are golden brown on the bottom. This really takes some time to adjust to your oven and ingredients, the first batch should always be your test batch. You're probably going to ruin a few unless you're really in tune with your oven.

Cool and serve.

Alternate: Add raisins instead of chips. Alternate: Add 2 t cinnamon and a bag of pecans instead of chips.

I remember that cookie story, it was a fancy dept store or something, and they charged her too much for it. Or it is all made up…
