Ended up using a dab of clarified butter to fry em up in a large shallow pan. It took me two tries to get the timing and heat just right.

They taste pretty good for something without vitamin M. In retrospect I would add some salt and some spicy peppers to the filling.

Quesadillas are a favorite of mine. I just throw a large tortilla on a griddle with heat on low/medium, and put on shredded cheese and other fillings on while the griddle is warming. Once the cheese starts melting, fold the tortilla and turn the heat to medium/high. Flip the tortilla after about 3 minutes.

I use precooked meat to ensure its properly done.

Hm maybe thats a tex-mex thing, its very common in my neck of the woods. Typically chopped beef and/or chicken fajita meat. I've also seen them filled with shrimp or brisket.
