You purchasing pre-sliced/packaged prosciutto at the grocery store? If there's a good Italian market near you, look into having them shave some of their imported stuff. Parma ham is killer too - very similar. If you like a hint of smokiness, try to find some Tyrolian speck.

I buy it from the deli so it's sliced to order. I don't get the most expensive available in the area, but it's very good imo. After a certain price point there are diminishing returns.
It's all good - love well cured and aged pig! One of my life goals is to buy a one-way ticket to Spain, and then spend my final months/weeks/days gorging on thinly shaved Serrano and Iberico hams while washing it down with whatever house wine is available. Might have to throw in some local sardines and Marcona almonds. There are a myriad of worse ways to go out - better to feed yourself than the medical industrial complex.
Quiche sounds killer btw.
