Isn't it basically a synthetic salt or something? Have I been misunderstanding what it really is this whole time?

Honestly most people don't understand the MSG thing. It got bad press from fake news back in the 90s. It actually contains less sodium than typical salt.

And no it occurs naturally. It's really an excellent seasoning.

Yea man. Its very subtle. It doesn't really make or break a food, but it does add just a little something extra.
