8 lbs of loin I pulled out of brine and placed in stockinette last night - aka Canadian bacon. 19 pounds of belly in the bags in the bottom left - pretty much done curing. Will put on hangers and hang tonight preparatory to smoking tomorrow. So Nueve de Poal then... Ho Ho Ho!
