Three Chili Vinegar 5% Acidity

I bought this from a thrift store yesterday. I googled about the safety of peppers in 5% vinegar and if they’re unopened, commercially put together, in darkness, in the fridge, etc.

So these look commercial because of the label. They look unopened because of the wax seal (there’s a small chunk missing of the wax). They’ve been in light but for how long? I know they were in light at the store. But based on the date, only a couple weeks. Were they out on display in someone’s kitchen? Does any of that matter??

The solution is now slightly below the tops of the peppers.

In addition to vinegar, there’s salt, sodium benzoate, sodium sulfite, citric acid, and potassium sorbate. Those are common food preservatives.

A reverse image search across 5 sources found no match.

Regardless of your feelings about the preservatives, I’m wondering if this is likely to be fine or not and why not.

Also, I’m colorblind so I may not see things that are obvious to others.

I’d be most thrilled if they’re safe to use….i almost opened it last night to put some in a salad…..but I’d still be happy cleaning the bottle and just putting it in the kitchen somewhere.

My money is on they would be safe to eat in moderation but likely don't taste that good. The coloring looks a bit off. The vinegar level not submersing the peppers is also a concern. It might just be from it entering air pockets within the peppers and not a slow leak.

I dunno, try one. If it seems fine just make sure the rest of the peppers stay below the vinegar level.
