TLDR; Most people only eat French fries, not "fresh" potato. I don't get it. I really like potatoes, we cook a ton of different dishes with potatoes and probably have them at least every other week if not weekly.

When you don't have time to make something, a quick baked potato with some butter/sour cream, chives from my hydro garden, if you have some leftover bacon to put on top or maybe some melted cheese its easy, its quick and its fairly healthy. It's also cheap.
