Your gonna hate it but I have got pretty good with the sear each side and finish in the oven. Works for me.

Nothing wrong with that method. I crank the oven up to at least 425 when I do that. Cast iron works great for this.

That works too. I've done that as well and have nothing against it. If I have the time I prefer grilling on charcoal or Sous Vide then pan finishing.

The important thing is. "Start with good meat, don't fuck it up".
