Yeah, I take my frozen pre-made burritos and heat them in microwave, then sear each side. Then fry cheese in skillet until crispy on the edges and place burrito on it, flip the whole mess and then crisp the bottom side of the burrito.

Yeah, I think its the low moisture and higher salt content that gets them to really crisp up and keep good flavor.
