They're tiny red mites that are basically dried and crushed to make a dye.
It is a 'natural' red dye. Other red dies made from petroleum products are probably worse. I mean, at least the bugs are technically edible.
Now, know that I will never eat the bugs, and I maintain that I will eat a vegan before I eat a bug (100% grass fed), but I don't know if this technically counts as it's such a small portion of the food. And as far as food dyes go, it's one of the least unhealthy. Although I still avoid it, but also am not a fan of red velvet anything.
