I was getting sliced smoke pork loin from the deli when it was on sale. Pretty nice. I will go with most any cheese, even american, so long as it is not, "cheese food product..." Provolone toasts up nicely, smoked Gouda is good, and a spicy pepper jack is always an option for me. Sauer kraut, but you need to rinse it with water before preparing/eating. I learned that late in life.
