I don't think it is that important since some 70% to 80% of the olive oil in the world is fake. Which really sucks.

Not at all like honey. Most honey is the real deal but sometimes watered down with HFCS. But that is pretty easy to stay away from. Also you gotta make sure your honey isn't from china because they store it in lead lined vats before bottling, morons. Anyways, always buy local honey! Especially if you have allergies, it really helps.

It is all about the squeezings. Extra virgin is the first squeezing. The third squeezing is where the paste is heated to extract sansa oil, which is basically your cheap olive oil (which should actually only be used for frying).

Plus extra virgin is a finishing oil, something you add towards the end or at the end of cooking due to its low smoke point. Standard olive oil has a higher smoke point so it's a good base oil for cooking.

I have had some extra virgin olive oil and really the only difference is how much it hurts when they decide it is over.
