we've only tried making Indian once; it wasn't bad but definitely not our wheelhouse. The cats down the street are Singh so they make killer stuff. One of these days, I will get to a place to try Phaal Curry.
Until then, this dude (youtube.com) will not disappoint with the recipes.

well, that'd be up to you. I dehydrate the entirety minus the calyx (stem and cap). the pepper will lose some efficacy as it dries but they can still be potent. you can always store what yo don't use tis time for another time as well - keep in mind the longe rit sits, the less efficacy it will have
