They're great for adding heat to chili without getting an overwhelming jalapeno taste. You'd want to use them at a 50:1 ratio instead of jalapenos; if you'd normally add 10 jalapenos to a pot of chili for a certain heat level, instead add 1/5th of one of these peppers. Or if you want it 2.5X as spicy, half of one will do.

Wear gloves and eye protection when slicing these. This is important.

Don't drink water or any other liquid, you have to let the capsaicin evaporate and liquids just keep it around longer. I'll do a special breathing to help the saliva evaporate faster.

I would recommend a hot sauce to pour over chili that way you can't exceed your heat tolerance and screw an entire batch of chili.

personally, I would use all three (but i use ghosts for a lot of things - reaper if I want it hot). but this really depends on the volume of chili you're making.

you would be pleased with a vindaloo.

one thing to bear in mind is the capsicum chinense in ghosts is a bit potent (the flavor of the oil); some find it off-putting when eaten raw so you can always dehydrate them and pulverize for ghost powder or ferment for a bit - i do both so it's your call); I also eat them raw - I pulverize in a mortar with salt, lime, and fresh garlic.

if you are not certain if you like or dislike the flavor - try a bit of one first. ghsots are typically sweet and fruity before the heat kicks in

Best flavor I've ever tasted from a pepper was red ghost. The heat was intense for a few but worth it.
