Not sure of the recipe, but I needed this on vacation. Had some ice water, and their special Manhattan on the rocks beforehand. Then a Caesar salad.

Excellent steak, dry rubbed and pan fried, topped with some herb butter. Maybe not as medium rare as I'd like, but still awesome.Served with asparagus and roasted red potatoes. Let it sit about 5 minutes, while I smoked a cigarette. Then enjoyed with a glorious Pinot noir from our lovely commonwealth in south eastern Pennsylvania.

I grill mine, but I would like to try it. Some serious chefs do the pan fry. Plus you can baste with herbs and butter easier.

Yeah but you don't get to control internal temps. I reverse pan sear with butter, but I either sous vide or smoke till internal temp is 135.
