taste of the poorest will dominate
I've only noticed that with lower grade meats, or wildly different products (ie bologna vs pastrami). There was a couple others that I didn't put on simply because I didn't think it'd go well.
Unrelated to this sandwich, I do like to mix and match similar products to see what happens, particularly with drink mixes. Sometimes it's equal or better than the two individual products, and sometimes it's not.
What is weird though is when you have two products and their flavor cancels out, essentially neutralizing each other and having a less flavorful product, despite being in same/similar category beforehand.
